GIROLLE AND GARLIC CREAM TARTLET

Ingredients for 4 people:

  • 50 g de girolle mushrooms
  • 2 cloves of garlic (one minced and one crushed)
  • butter
  • 230 g shortcrust pastry
  • 5 tablespoons crème fraîche
  • 1 egg yolk
  • a pinch of nutmeg
  • 6 tablespoons of chopped parsley
  • salt and pepper

Method:

  1. Clean the girolles.
  2. Heat the butter in a pan and sauté the girolles with the minced clove of garlic for 3 minutes. Season to taste.
  3. Preheat the oven to 180°C.
  4. Cut six circles out of the shortcrust pastry to fit your tartlet cases. Place the pastry circles in the cases and prick them with a fork.
  5. In a bowl, combine the crème fraîche, egg yolk, nutmeg and the crushed clove of garlic. Add salt and pepper and then whisk.
  6. Spread the mixture on the base of the tartlets and cook in the oven for 10 minutes. Add the girolles and then cook for another 10 minutes.
  7. Sprinkle the tartlets with parsley. Serve warm.
