BERRY TIRAMISU

Ingredients for 4 people:

  • 600 g raspberries
  • 25 spoon fingers
  • 300 ml water
  • 250 g mascarpone
  • 3 eggs
  • 150 ml rum
  • 80 g caster sugar

Method:

  1. Separate the eggs.
  2. Whisk the yolks with the sugar until they turn a light yellow.
  3. Add the mascarpone. Whisk well. Whisk the egg whites until they form stiff peaks.
  4. Gently mix the egg whites into the mascarpone cream. Pour the rum and water into a shallow bowl.
  5. Dip the sponge fingers into the mixture until they are soaked in it but not soggy.
  6. Use them to cover the bottom of a dish. Cover with half of the cream.
  7. Sprinkle with raspberries. Cover the raspberries with a layer of spoon fingers.
  8. Cover with the rest of the cream and raspberries.
  9. Leave in the fridge for at least 6 hours.
